Blue (a cooking method involving poaching an unscaled fish in an acidic water, making the outer skin turn bluish) cooked trout.

BLUE TROUT

6 or 8 foot-long trout OR about 7 medium sized trout, fresh caught
1 quart vinegar
3 quarts water
24 peppercorns
3 bay Leaves
2 teaspoons salt
Heat the last five ingredients to a slow boil. Gut and scale trout and toss them into the water for about 5 minutes. Trout must be freshly caugt to get the blue color. Remove trout and serve with melted butter and vegetables.

Pooor fish, this illo reminded me of a children story I read from a book as a kid ... It's about a crab recuse a fish get flush onto a beach.
